Vitality Banana Oatmeal Cookies

šŖ Cookies healthy enough to have for breakfast? Yes Please!
These cookies:
ā Make a great snack alternative to store bought sugary granola bars.
š« Have no added sugar are gluten free and vegan.
š©š»āš³ You can switch up added ingredients to create a flavour combination that suits you.
š Some ideas for flavour combinations:
š Triple Chocolate (no longer dairy free): 3 different types of chocolate chips
šš Cranberry Macadamia: Substitute a mixture of dried cranberries (or cherries or blueberries) and macadamia nuts for the chocolate chips.
ššš Muesli Chocolate Chip (my personal favourite ā not gluten free): Substitute half the oatmeal with Bobās Red Mill Muesli (a yummy combination of sunflower seeds, dates, almonds and walnuts)
āØļø I prefer these cookies warm, right out of the oven.
ā« I will often double the recipe and place them in an airtight container in the fridge. They rarely last longer than a few days in our house.
Hereās the recipe:
INGREDIENTS:
1.5 cups rolled oats (I use Gluten Free Large Flake Rolled Oats)
2 medium bananas (the riper the better)
1/3 cup chocolate chips (I like dairy free mini dark chocolate chips)
1 scoop protein powder
DIRECTIONS:
1. In a large bowl, mash bananas well
2. Add in remaining ingredients and mix until combined
3. Drop by the tablespoon full onto parchment paper lined baking sheet
4. Bake at 350 F for 15 minutes.
YIELD: 12 cookies
